I use this recipe every year as leftovers for turkey and it’s always a huge success (how could it not be with all that hollandaise and veloute?). My big regret in life was not sending Mr. Price fan mail not for his movies, nor his patronage of the arts, but for this book which literally opened my young eyes to the world of cooking :)
